My iPad Pro was stolen at the airport

I need to first learn to erase the device. And then get a replacement through Apple Care.

how do I go about doing this?

You don’t get a replacement.

AppleCare for iPads do not cover lost or stolen devices.

Here is Apple’s advice for lost or stolen devices:

If your iPhone, iPad or iPod touch is lost or stolen – Apple Support

Use the Find My app to locate a lost or stolen device – Apple Support
