I woke up this morning, opened a credit card app and got a warning NOT to open the app, that my phone is jailbroken. I did not knowingly jailbreak my iPhone. I immediately performed a reset (but kept my data).
is there anything else I need to do to “unjailbreak”? How did it happen in the first place?

Your banking app needs to be updated for full iOS 14 support. It doesn't recognize iOS 14.
Many developers got left in a lurch by the extremely short notice when iOS 14 was publicly released.
The App Developer has not properly updated their App for iOS 14. It is an erroneous notification, which also happened to one of my Apps. Since I know that I did not Jailbreak my iPhone, I continued to use the App, and the notification disappeared. It has not reappeared.
