Folders disappeared??

I'm having bit headache with the iOS14 update. First problem was that it didn't let me create empty space on the first page. If I moved app away from first page, it would automatically (and seemingly randomly) move another app back to the first page.

But my bigger problem just happened. I was playing with the widget tiles, and I successfully stacked some tiles on the 2x4 shape. Then I thought that I want to use the large-square widgets, and tried stacking them. For one, they refused to stack. It would just always slide the widget to next page. But while trying to stack them, some reason it removed all my app-folders, spreading all the apps across the pages.

Now I have 14 pages of apps (I counted) in random order. Finding any app is pain in the ...

And to make it worse, you can't reorganize apps anymore on iTunes, and I'm on Win10 so I cannot download the Configurator app for Mac. Re-arranging all the apps to folders with 14 pages to scroll through would take ages.

Why the folders disappeared while I was moving the widgets? And is there any easier way to re-create the folders?
