It sounds like you are having an issue with your Apple Watch Series 5 restarting. What version of watchOS is on this Apple Watch? Were you trying to update to watchOS 7.0.1 when this happened? If you were not in the middle up updating, try to force restart your Apple Watch by following the instructions below:

Which iPhone is this Apple Watch paired to, and what iOS is running on it?

The most recent version is iOS 14.0.1

The iPhone should be updated and restarted before updating the Apple Watch.
