How can I uninstall iOS 14 without this profile and device management? It’s not on my phone.
You can never "uninstall iOS 14" until possibly when iOS 15 is released.
Profile and device management would be used in certain situations, such as if your iPhone were governed by an employer or school, or you were using beta software. But you can never "uninstall iOS 14".
Check Settings > General > iPhone Storage and be certain your free space never falls below 10% of the iPhone's total storage.
Check your Notification Center and clear it out.
Check your app updates and perform them so there are none pending.

That’s too bad. It is really adversely affecting my phone’s performance. It locks up, is very slow, especially in the phone section.
