Hi,I just have my new Apple Watch series 6,& I would like to pair it.should I unpair it my Apple Watch series 4 first before I pair it my Apple Watch series 6?

Absolutely! That will back up your old Apple Watch’s data on your iPhone so you may transfer that data to the new Apple Watch.
