Set up multiple calendars on iPad - Apple Support -- While you can't delete the sidebar, you can hide it instead. Tap the Calendar icon on the top-left corner of the Calendar app to hide the sidebar. If you're not sure which icon to tap, scroll down to "See multiple calendars at once".
