Apple watch backup restore fails

I unpaired my Apple Watch 3 from my phone because I was trying to install the new operating system and it kept giving me the message that I didn't have enough room. I deleted apps and photos which still wasn't enough so I followed the directions to unpair it, set it up anew, then unpair again and restore from a backup.


No matter which of several backups I tried to restore, I get the message:

RESTORE FAILED, Failed to restore with Error: Error Domain+NBErrorDomain Code=0 "(null)"


Anyone with ideas how to not lose everything I had on my watch previously?

I have followed the instructions to reset everything and got to the point that I began to update the watch system. It has been really slow. It has gone through the stages--Initializing, Downloading, Installing. It's at the Installing point now but it's taken over 5.5 hours to get to that point. Is this to be expected? Does it typically take 4-5 hours to install the update? (I don't actually know how long it will take because it is still "installing" which began about 3 hours ago.)
