Does Apple Watch GPS version need a SIM card?
Does my Apple Watch 6 need a sims card if I’m only using the gps version?

The Cellular Apple Watch has an eSIM (no physical card).
The GPS only model does not have an eSIM and of course does not need one.
If you have a Cellular model, but do not want to activate the cellular radio and pay the monthly fee for cellular service, then you can use a Cellular model as if it was a GPS only model, and in this case you would not be updating the eSIM.
Both modes will work just fine, as long as your iPhone is nearby.
