Column Formating in Pages 10.2

I can't format columns of text in Pages 10.2 (new version in Sept 2020) as I used to do in previous versions. I used to type in a number of lines, separated by RETURN, then select them and change the number of columns from 1 to 2 or 3. I did this to type up ingredients for recipes. Then I could type in the recipe instructions, formatted in 1 column. This was a simple way without using tables - fast and efficient.

I can't do this in Pages 10.2, or at least I can't figure out how to accomplish this in 10.2, and the instructions in the online manual are those I have followed in the past successfully, but not any longer.

When I try to do this now, the cursor goes to a new page. I can't select a new section, either. That sends the cursor to a new page as well.

What am I missing or doing wrong?

So, I decided to submit a support ticket on this and opened Pages to recreate the problem so I could attach that file.

But I could not do so - Pages worked as expected and as I had previously–except for yesterday–with none of the formatting issues I had yesterday.

Therefore solved, but mysterious. The solution seems to have been: Wait until tomorrow!

To correct my reply to Barry's suggestion stating how to access the latest app help, the instructions in the app help, and in the support pages, is correct and unchanged from previous versions, as regards this process, as far as I can see.
