For the past few days, maybe since iOS 14 (or watch OS 7?) the date has disappeared from the infograph modular watch face on my Apple Watch Series 4. When I try to recreate the face, "date" is stuck on "off". What happened?

Make sure that you have the Default Apple Calendar app installed.
If you have it already installed delete it and re-install it.
