Why Can't I Get All The New Wallpaper

why can't I get all the new apple watch wallpaper on my device? I am running iOS 14 and have the latest update installed on my watch and I did have it before, but for some reason most of them were removed. when I go into watch settings, under the Face Gallery , I only get GMT, Chronograph Pro and Count Up. all the others are missing.

I am running beta profiles on both my i8+ and apple watch 5. but as I mentioned before, I did have all the new wallpaper at one point, go some update and it removed them. apples suggested I delete and reinstall the beta profiles on both the phone and watch, did that, still nothing.

I don't understand what's going on. Can't I get all the new wallpaper on my apple watch 5?
