imessages
I’ve just brought a new iphone, if i set it up manually without transferring anything from my iphone, can i eventually restore texts/imessages to the new phone at a later date?

That depends on whether the messages were being stored in iCloud -- Keep all your messages in iCloud - Apple Support, in which case you can turn that on and your messages will sync to the new device; or if that feature wasn't being used, then your messages can be possibly restored from a backup.
