Everytime I try to update my contact information, it deletes the updated information. I am not sure how to prevent it from going back to the original information. I saw someone said they needed to update their emails but I don't understand how or where.

We see you are having some trouble with editing your contact information on your personal contact card. We want to help make sure that information is accurate. Do you have contacts being synced from another service such as an email account? If so you may want to check that your contact information isn't being synced from there and overriding the information on your device. Also go check in Settings > Contacts > My Info, and make sure you have the right contact selected there. In that same settings page you can select "Accounts" and then choose any email addresses listed to see if they have "Contacts" enabled for syncing. If they do you would need to go to your Email account on their direct website and edit your information.
