I am about to send my apple watch series 3 to trade in, however - how am I to be certain that the watch data is erased, when I unpaired from the phone?

Yep - did all of that, but I didn't erase from the watch itself. Is it sufficient when the watch says to bring iphone near watch.
If you followed all the above steps to the letter then the watch will be just as though you just bought it.
