How can I automate a sleep timer for my Apple TV using HomeKit?
It would be much better to use the sleep function on the Apple TV box
Put your Apple TV to sleep:
After a period of inactivity, your Apple TV automatically goes to sleep. You can also put your Apple TV to sleep with your remote or from Settings:

Automations with Apple TV only give the option to play music, then turn off. This is done on your iOS device via the Home App

You can tell Siri via the HomePod to sleep the Apple TV but you can’t run scene or an automation with the sleep command. I have resulted to setting a Siri shortcut that sleeps the Apple TV and triggers a scene in the Home App, it would nice if it could just be done without the need for Shortcuts though
