Does the watch really stream?

I have the Apple Watch series 5 and I can not stream Apple Music, podcasts, or anything else (like Spotify). The only way I can listen to music on my watch, without the phone, is to download the music. Even paying for cellular I could not stream anything to my watch without the phone present. So what am I missing? Can you stream to the series 5 or no?
