I have a iPad Mini 5 and Pencil. I have updated to OS 14.0.1 and am using my Pencil In Notes, Mail, etc. But I cannot use it in Pages. I can write a note in Notes and send to Pages, but Pages does not recognize the Pencil. What am I doing wrong or not doing?

Take a look at this. Maybe you have the default behavior set differently.

Tap the 3 dots at the top and swipe down to the Apple Pencil setting. Tap on it and If you have the pencil set to select and scroll, you will not be able to scribble with it in Pages. Turn that off.

Are you using the latest version of Pages? If not, look for an update.
If you are using the latest version of Pages, Open the document. Tap on the screen with the pencil. Then tap on this pencil at the bottom to write and convert to text. Selecting one of the other pencil icons chooses drawing tools.-
Pages is only for typing.
If you are on iOS 14 you can scribble and copy as text to pages.

If you are saying that you cannot Scribble to text in the Pages app, you are wrong. Please clarify what you are saying.
There is no tool bar on the page to activate the pencil. By the way, I used my pencil to write this reply so no, of this point I can not use my pencil on Pages..
The tool bar you are showing does not appear on my screen in Pages That is the problem.
