What do these do? How can I use them? When I select one, all I get is a colored line to edit, but I don't know how my edits affect what parameters.

Never mind, I figured it out. It's one of my added plug-ins. A really good one, btw, called MVMeter2 (by TBProAudio). It provides a much needed VU meter to GarageBand tracks.
