Usefulness of FileVault

I have a MacBook Pro 16" with a built-in T2 chip. I have set a firmware password. What's the point of FileVault if you need to either enter a macOS password or a firmware password to run third-party software from a flash drive to access data (Of course, except when someone decides to unsolder the SSD from the motherboard)?

All Macs with a T2 chip are encrypted. The chip automatically decrypts unless you enable FileVault.

With a firmware password and Secure Boot setup, I don’t imagine there is any way into the Mac if stolen.

Don’t turn on automatic login, though.
