We all organize things in the way our head works. Apple’s way isn’t always best.
I really liked the old way of organizing my photos. There were less steps for ME. I want to be able to choose the past way of organizing, where I use MY brain and not Apple’s brain.

Every software has been designed with a target group in mind and optimised for this group for easy use. The current target group seem to be users who like the iPhone doing all the work and serve them many ready-made albums on a silver platter, so they can enjoy their photos and find them easily, without having to create their own albums. If you want different things, write a feature request to Apple - the more users are requesting advanced features and tools for organising their own Photos Library, the more likely it will be, that the target group may be reconsidered.
