I blocked someone, but their messages still went through on my MacBook. I clicked on the conversation, so I’m wondering, since they’re still blocked on my phone, will they receive a read receipt since I technically read it on my MacBook?

Check the following on your MacBook:
Open Messages app and then from the menu bar choose Messages ➔ Preferences ➔ Message Tab ➔ Send Read Receipts : If this is checked then the sender will get read receipts.
