You can hide any app except the settings app. Most apps can simply be removed by pressing and holding on an app until it jiggles and then tapping the x to remove it. This will completely remove it from your iPad.
You can also use the allow/disallow function of a Mobile Device Management platform to hide apps. If they are disallowed, they will disappear, will be unusable, but can still be on the device.
If you are hoping to achieve something like the iPhone has with Apps Library, unfortunately, this isn't possible.
