I have a 2020 macbook pro with only 2 thunderbolt ports, how can I connect 2 extra monitors and still have space for the power cord?

The setup is "use both provided USB-C cables in the box, and you are good to go.
They don't specify how to charge at the same time, bit it appears you connect your power adapter at the USB-C connector on one or the other of the displays labelled "Pass-Through Power".

Thank you for your answer. I bought a XEBEC triscreen set up. it can take HDMI plus Power or USB c. I would like to use it it with the usb c to not need an extra cable for the monitor power...
