How do you get rid of family organizer in family sharing?

The family organizer themself has to leave and dismantle the Family Sharing. They cannot be ousted if that's what you're asking.
If that was your intention, i.e. to leave, then you seemed to follow the right procedure -- Leave Family Sharing – Apple Support.
I decided to remove myself as a Family Member and the Family Organizer disappeared from my phone. That was my only option that I was allowed. Apparently at looking at google searches, the Family Organizer is notified that I removed myself. And hopefully there is no longer any ties to the Organizer. That is my intention in doing that and I no longer see that person on my phone.
