Linking Apple Watch Cellular to a secondary iPhone

I'm living in South Africa but working for a US company. My main iPhone therefore is on a US AT&T contract but it won't allow my Apple Watch to connect to AT&T in South Africa.

I get a message saying "This Apple Watch does not support AT&T cellular in this region".

How can I keep my Apple Watch linked to my main iPhone (US AT&T number) and then link the Cellular to a secondary local iPhone (South African number)?

Read the following 2 articles. You have to have an iPhone that has dual SIM support (a SIM and an eSIM).
