Undo button in notes?

Today I accidentally deleted all the text from very important note and what was my surprise when i’ve understood that there is no way to undo that.

I didn’t delete whole note, so I was not able to restore it from recently deleted. I’ve cleared it from inside.

And the only way to restore it was to fully delete all data from my phone and restore it from icloud.

I’ve done with that already restored that note, but...

Bye bye my photos and videos (I didn’t upload my photos to icloud)

So

1. Why apple can’t do this undo button in notes app?
2. Why can’t i restore only notes from my icloud without formatting the whole phone?
