The iPhone 12 does not dictate which carriers it needs to be connected to for 5G. Your carrier, Google Fi, decides that. If Google Fi or its partner allow 5G their network then your iPhone 12 will connect to their 5G server. If they do not then your iPhone will connect to their 4G LTE Network.
