how do you remove or replace an mdm profile on ipad ???

That depends on how it was applied and what restrictions were on the profile when installed. In general, you should simply be able to remove it if it was added manually. If it was added through an MDM platform and the device is enrolled in Apple Business/School Manager, it may be locked to only be removed by the MDM or by wiping the device.
What are you trying to accomplish?
