I wanted to replace my old MacBook that I use for work with an iPad Pro that I had purchased. With my MacBook I’m able to use 2 screens additionally to the one on the MacBook. Can I do the same with my iPad Pro?

No. Unlike your Mac or PC computers with which you may be familiar, iPad doesn’t offer an extended desktop facility.

The best that you can hope to do is “mirror” your iPad screen to an external monitor (replicating what your see on the iPad screen) - or to play media content to an external monitor.
