Catalina, BUT:
Catalina comes with a lot more restrictions, and 32-bit software will not run properly under it. My recommendation would be run Mojave (to stop short of Catalina) and run with that for a while, then consider upgrading to Catalina.

Mojave brings in the more modern Apple File System (APFS) for your SSD boot drive, and uses Metal, the forward-looking standard for Mac graphics.
Apples' policy has been that the current and two previous versions of MacOS are the only ones to get Security Updates. When Big Sur is released late this year, Mojave and Catalina will be the only older versions still getting Security Updates.
Because of security Updates, some organizations prohibit the use of still older MacOS.
