just realized that Apple is tracking all of my personal preferences and information; invading my privacy!

You have the option to set all of your privacy options directly on the iPhone yourself. You go to Settings>Privacy. You can set what can and cannot be shared in all of your apps. What makes you believe your information is being shared?
