my iPhone was stolen. if I buy new iPhone from apple.com, does iPhone come with SIM card?

My iPhone 11 Pro was stolen. On the app, find my iPhone has section of erase this phone. I am wondering if I should erase so no one can access my data in my phone?

The new iPhone 12 comes with a eSIM and also a tray for a nano-SIM (which you can ask your carrier for one)
