Does anyone know how to TURN OFF Screen Time without having the password? This PIA showed up on my iPhone 11 running 14.0.1 WITHOUT me purposely turning it on and setting the password. I’m an adult, how it got turned on is beyond me! Any help would be appreciated!

Since I do not think that a passcode can be setup automatically, you (or someone else) could have set it up, even inadvertently.
In any case these are the instructions to remove the passcode (minimum requirements are: iOS 13.4 or later, and the AppleID & Password used to set it up):--> If you forgot your Screen Time passcode – Apple Support
