Change Name

Hi. Right now, I am using my Apple Watch 6. I have my Apple Watch 2 in my drawer. Both watches are attached to my iPhone. I have not cancelled anything at this point. If I take the old watch off of my phone, can I change the name on my new watch from Johanna to Jo's watch?
