After last update, the text size on my Ipad books is really big. When I try to decrease text size with the double A's, sends the page into double columns. Why did the text default into a much larger size and how can I decrease the size without getting double columns?

It seems like your iPad text size is larger than you had previous set it at after a recent update. Is this only happening to the text size in the Books app? Are you seeing that elsewhere like the Settings app?
When you hold it up vertically, are you still seeing the layout in two columns? Does this happen with all books or just the one you're currently using?
