Was your “chirping birds” alarm associated with the Bedtime Alarm feature of your iPad - and/or did the alarm coincide with update of your iPad to iPadOS14?
With release of iPadOS14, Bedtime, as previously accessed from the iPad Clock App, is no longer an element of iPadOS. For iPhone, the equivalent Bedtime function has been relocated to the Health App (this, of itself, is not present on iPad).
Apple do invite constructive feedback and feature requests via their product feedback portal:

Sorry, it is not possible to restore an earlier version of iPadOS.
I’ve used the iPad alarm clock for a few years because I liked waking up to the birds.
I don’t approve of or appreciate this change.
