The latest update to Apple TV does not allow audio connection to Airport Express, only TV speakers and HomePod. Any fix?

By "latest update" are you running a beta version on your 4K Apple TV? Regardless, were you able to stream to your AirPort Express base station, from the Apple TV, before this update? What have you tried, so far yourself, to resolve this?
Issue resolved. In the settings menu for Default Audio Output Apple 4K 14.2 doesn’t allow default connection to WiFi other than HomePod. But audio output can be changed in Netflix and Crave by scrolling down to a hidden dialog box allowing selection of audio output when playing a video. Prime video has an audio button displayed during play. Once the audio output has been changed in any app it becomes the default for all apps.
