I am collecting my preorder of Iphone 12 pro max 256gb pacific blue on 13th Nov in the morning. Will I be able to change the color to gold (If there is stock for gold) without refunding and buying it again as I do not have the credit card with me at this moment?
You'll have to see on the morning of your pickup if there are any available in the color you want. If they have available stock, they will let you change. If they don't and that's certainly a high probability since millions of people pre-ordered the 12 Pro Max, you can return it for refund and re-order the phone you want.

Just before brining out the box to him, he asked if he could change to the green color. They didn't have any available as everything in stock was already pre-order fulfillment phones, so he chose to keep the color he ordered as the only other option would have been to return the unopened phone for refund and order the green phone.

That's not something anyone here can help you with. You'll need some form of payment to buy the color phone you want. Apple typically does not do return/exchange. They typically do, refund/repurchase.
You will be in essence returning the phone you ordered and buying the phone you want, so in essence, refund, then purchase. The Specialist is correct in suggesting that to you.
There is no option to change the color though, and my order is still under "Processing". My order is self pickup from the apple store.
If it hasn't shipped yet (I'll bet not) you can edit the order from the email Apple sent you.
So i don't have to do a refund to change the phone color? They said that i have to talk to the in store specialist to confirm if i need to refund and buy again to change color on Friday as i chat with the specialist online and they say i have to refund and buy again if i want to change from blue to gold color.

The US, but I don't think Apple would do this differently in any other country if the purchase is being picked up in an Apple Store. Apple offers a 14 day no question return policy, just about everywhere they do business. They're still not going to switch your phone out for a different color IF the color you want isn't available Friday, when you pick up your phone. They certainly won't take someone else's pre-order and give it to you. You'll have to wait till Friday to find out. Maybe you'll be lucky and they'll have the color you want in stock.
