Why are OO/LO crashing on startup? Is there a fix, or is only option downgrading back to Catalina?
Changing office software (to Ms Office, Numbers/Pages, etc) is not an option I'm willing to do. Will change OS's first; too big of an impact on business.
I updated to libreoffice 7.0.3.1 and that works for me.

Try updating your third party software.
Based on the posts on the Libre Office support forums, this is a problem with libra Office. They haven't gotten it up to speed. It is not yet compatible with Big Sur.
Just for your information, it was working for me since Friday 13th November 2020 when I downloaded 7.0.3.1 as I said then in a previous post.
as of 11/18/20 download 7.0.3 works fine
