Using Notes - re-enable option to sort checklist by moving completed items to bottom of list

Noob here . . . made my first checklist . . . since it was a short list, I clicked on 'Do Not Enable sorting completed items to the bottom of the list', thinking the ability to select this feature option w/b available on any list.

Now, I'm using longer lists and would like to enable this feature, but don't see any way to do it . . . is this possible, or am I just SOL?
