I work in a factory, we aren’t allowed to wear watches or any kind of jewelry. I had used a Fitbit tracker that I could remove from the strap and keep in my pocket, it would still track my steps and flights of stairs. Can the Apple Watch do this? I work so much that this would really be a deal breaker if it can’t.

We see from your post that you would like to be able to track your activity while the Apple Watch is in your pocket.
Apple Watch is designed to offer a wealth of tracking information while on your wrist. It would not be designed to track metrics while in your pocket.
