Since upgrading to Big Sur, I am unable to reduce jpg files sizes in preview like I used to do easily on Catalina. Frustration isn't strong enough. There is NO simple way of reducing a JPG, keeping the physical image size but reducing the file size say from 3Mb to 300Kb with one simple moveable slider like I could do previously on Catalina.

It's a mess about but I have found a way of reducing file size and keeping to the original photo size.
In Preview go to Markup, go to Adjust Size, Fit into (Custom) just change the Resolution and this will simultaneously change the Resulting Size (file size) at the bottom accordingly.
I don't change the pixel size but only that of the resolution size. Example of an image image size was 620kb resolution 50 but changing 50 to say 5 and the 620kb is now 11kb. Granted the image has become smaller but this is what I would have expected anyway. Try experimenting, I am now somewhat satisfied.

No, I agree, there seems to be a bug in Preview on Big Sur around reducing image file sizes. I can change the pixel size but when I go to reduce the file size, nothing changes.
