Welcome to Apple Support Communities. It sounds like you're unable to see some emojis on your iPhone. We are happy to share information that may help.

First, restart your iPhone: Restart your iPhone.

Also, check under Settings > General > Keyboard > Keyboards to check to see that the Emoji keyboard is listed there.
