Is there anywhere in the apps that I can create a signature , not typed letters , but a pen written sinature for documents that I need to sign.

Do you have a scanner? You can scan your signature and save it as an image file in whatever format is best for your needs. Then it can be added to a Pages layout by dragging and dropping.
Or use your iPhone to take a photo of your signature and use that.
It depends on the application. As VikingOSX mentioned, Preview is one of them.

Only in Apple's Preview application, included in macOS, where trackpad, camera, or compatible Apple iOS device is supported for capturing signatures. These signatures will only be usable with PDF documents opened in Preview. The Preview signatures cannot be copy/pasted to other applications.

I was using Pages, but sure I can save as a pdf then open up in Preview, it is convoluted but will suit my needs for now.
