Printing Test Messages

How do I print out a series of Text Messages from one person from my iPhone 11? I can't find Messages in my iCloud account and Messages should be backing up. Just backed up my phone a couple minutes ago.

If you had messages in iCloud turned on Keep all your messages in iCloud - Apple Support and those messages were deleted, then they are permanently gone. If that feature wasn't turned on, you can restore from a backup -- Restore your iPhone, iPad, or iPod touch from a backup - Apple Support.

I have every app listed switched ON to Back Up in iCloud. BUT it is not backing every app up. Only Contacts, Photos and Notes are being backed up. Why isn't it all being backed up when the whole side of my phone has the green buttons lit up? I need to print out a long chain of text messages from a Pella Window order where I prove my point as the salesman is trying to screw us. He ordered different windows than I instructed him to do. I need this info to give to his Boss today.
