If we understand correctly, you upgraded your MacBook Pro to macOS Big Sur and now you’re not able to use the slide gesture to control the volume or brightness on your Touch Bar. If sounds like you’re able to move the settings, it just doesn’t impact your volume or the display like it should.
Resetting the NVRAM was a great step, it governs both your sound settings and the display resolution on your MacBook. To make sure we’re on the same page, your MacBook is one that has the Apple T2 Security Chip, so you would need to hold the keys down until you see the Apple logo appear and disappear twice. Is this the process you followed?

Note that if you’re using a firmware password on your MacBook, you’ll need to turn the firmware password off first. Using those keys on startup will have no impact otherwise.

With this reset it’s important that you hold the Shift key on the right side of the keyboard when performing the steps.
If you’re still unable to get your sliders to function correctly, try creating a new administrator account and log in there to test your Touch Bar. This will let us know if the issue is system-wide.
