How can I install iTunes 12 since it disappeared with Catalina 10.15.7 update?

You can't. It was replaced. See information in: What happened to iTunes? - Apple Support
The problem is that I need to delete an old iPhone from my device list -- a list that used to be in iTunes. Now where can I go to delete the iPhone?
