How can I stop Apple Music from playing each and every time I connect my pods and each and every time I make a phone call.

It sounds as though content in the Music app is automatically playing when connecting earphones to your device, or answering a phone call. If you haven't already please restart the iPhone using the steps in the following article.
If you've already restarted, and the issue persists please sure that iOS is updated to the latest version as outlined in the following article.
