I want to use my phone’s camera and iPad screen to see under a cabinet. Used to be doable with Airplay. No Airplay anymore. Screen Mirroring button doesn’t offer iPad as an option. Both are on same wifi.

You cannot. However, if you have an Apple Watch, you can do it with that and your iPhone.
